Pork tenderloin, also known as pork filet, is a boneless, long and narrow cut from the loin. Because it is not for movement, this muscle is lean and tender with very little fat. Quick and easy to prepare when cut into medallions and pan fried with your favorite seasoning. Lightly sear on both sides, then turn down heat. Take care not to overcook.
