Cut from the shorter side of the beef loin, the muscles in this area do little work, and that spells tenderness. From Angus-Hereford cross beef animals born on lush green spring pasture and rotationally grazed through the growing season. We use no hormones, growth promoters, antibiotics, or animal by-products. These animals are fed to maturity on hay, corn, and oats raised on our farm.
